A traditional American breakfast with a twist of sweet potato in a healthier way ... Great for breakfast or brunch with soft , tender poached eggs!!
Take 1 large sweet potato. Peel off and shred
Wash with water twice
Drain the water and squeeze any extra
Add 1 finely chopped onion, 2 garlic cloves
Add 2 tbsp flour
Add 1 tsp pepper powder and salt to taste
Add 1 tsp olive oil
Mix well
Make balls and flatten it
In a Tava, add 2 tsp oil
Add the hash brown pieces
Cook each side for 4 minutes in low flame
Then in high flame for 2 minutes . Take out when it becomes crisp
Crispy healthier version of hash brown is ready
OR
Fry the hash browns
Take out and drain the excess oil when they turn golden brown
For Poached Eggs
In a pan, add a cup of water and pinch of salt.
Once the water is hot (no boiling) whisk with a beater and quickly add egg in the centre
Cook for 2 minutes and poached egg is ready
Serve the hash brown with poached egg and some tomato slices
Perfect for breakfast or brunch
