ABOUT Chicken stuffed potato skins (Starter) RECIPE

Potatoes are all time favourite and potatoes stuffed with chicken and cheese topped - so delicious. I baked this potatoes with cheese but for an Indian flavour I used chat mashala and kasuri methi instead of any other seasoning or spices. Its a good option as a party starter.

Ingredients Serving: 6

  1. Potato with skin cleaned 6
  2. Cheese shredded 40 g ( processed/ mozzarella/ cheddar)
  3. Chicken boneless 150 g
  4. Garlic 4 Cloves
  5. Ginger 1/2"
  6. Chat mashala 2 teaspoon
  7. Kasuri methi 2 teaspoon
  8. Scallions chopped 1 cup
  9. Coriander chopped 1 cup
  10. Fresh cream 1/2 cup
  11. Finely chopped Garlic 1 Teaspoon
  12. Finely chopped green chilli 2 teaspoon
  13. Red chilli flakes 1/4 teaspoon
  14. Salt 1 /2 teaspoon or as required
  15. Butter 20 g

Instructions

  1. TAKE POTATOES OF MEDIUM SIZE
  2. PRICK ONE BY ON POTATO WITH A FORK
  3. BAKE POTATOES AT 200° C FOR 55 TO 60 MINUTES IN PREHEATED OVEN.
  4. NOW TAKE BONELESS CHICKEN PIECES, GARLIC AND GINGER AND GRIND ALL TOGETHER.
  5. ADD CHOPPED SCALLIONS, CORIANDER
  6. ADD CHOPPED GARLIC, GREEN CHILLIS
  7. ADD KASURI METHI
  8. ADD SALT
  9. ADD CHAT MASHALA
  10. ADD FRESH CREAM
  11. MIX WELL
  12. CHICKEN STUFFING IS READY
  13. AFTER 55 MINUTES TAKE POTATOES AND LET THEM GET COLD. CUT AND SCOOP WITH A SPOON
  14. ONE BY ONE DO IT SIMILARLY.
  15. KEEP THE SCOOPED POTATO ASIDE .STORE IT ,YOU CAN USE IT LATER.
  16. GREASE THE BAKING TRAY WITH OIL OR BUTTER
  17. MELT LITTLE BUTTER ,ADD LITTLE CILLI FLAKES AND CHOPPED CORIANDER IN IT
  18. ARRANGE THE POTATOES ON THE BAKING TRAY, BRUSH THE POTATOES WITH THIS BUTTER
  19. POUR SOME SHREDDED CHEESE ( I USED CHEDDAR) IN THE POTATOES
  20. TAKE THE CHICKEN STUFFING
  21. POUR THE CHICKEN INTO POTATOES WITH A SPOON
  22. STIFF ALL POTATOES
  23. PUT SHREDDED CHEESE ON THE TOP OF ALL STUFFED POTATOES
  24. BRUSH LITTLE MORE BUTTER
  25. BAKE IT AT 200° C FOR 30- 35 MINUTES IN A PREHEATED OVEN
  26. SPRINKLE CHOPPED SCALLIONS
  27. SERVE IT HOT WITH TOMATO KETCHUP
