Ingredients Serving: 6

  1. For cooking rice 70% :
  2. Basmati rice 4 cups washed and soaked for 20 minutes
  3. Water for cooking rice 3 cups
  4. Salt 1 teaspoon
  5. Ghee 1 teaspoon
  6. Green cardamom 2
  7. Black Cardamom 1
  8. Cloves 4
  9. For green purée :
  10. Green chillies 2
  11. Mint leaves a bunch
  12. Cilantros 1/4 bunch
  13. water 4 tablespoons for grinding
  14. Marinade for green paneer :
  15. Green purée 2 tablespoons
  16. Paneer cubes 250 grams
  17. Cumin powder 1/2 tablespoon
  18. Red chili powder 1 tablespoon
  19. Salt 1/2 teaspoon
  20. Butter unsalted for shallow frying 2 to 3 tablespoons
  21. For Biryani :
  22. Oil 1 cup
  23. Barista ( fried dried onions )3 cups
  24. Cashews 50 grams or as preferred
  25. Cloves 9
  26. Green cardamom 5
  27. Black Cardamom 1
  28. Star anise 3
  29. Bay leaves 4
  30. Mace 1/4 teaspoon
  31. Ginger garlic paste 1 tablespoon
  32. Tomatoes big sized 3 finely chopped
  33. Green bell pepper big sized 1 finely chopped
  34. Garam Masala powder 1 tablespoon
  35. Salt 2 teaspoons
  36. Ghee 2 tablespoons
  37. Saffron infused warm milk 1 cup

Instructions

  1. Boil3 cups water.Add 1 teaspoon salt,tsp ghee. 4cloves,2 green cardamoms, 1black cardamom. Add 4 cups
  2. drained Basmati rice in the hot boiling water . Stir gently. Cover and cook rice for 70% in low
  3. heat . 70% cooked rice is done . Fluff immediately and keep it aside .
  4. In a blender , add a bunch of mint leaves,1/4 bunch cilantros,2 green chillies.Blend into a smooth
  5. purée . In a bowl , take 1 tablespoon red chili powder, 1/2 tablespoon cumin powder, 1/2 tsp salt.
  6. Add 2 tablespoons ground green purée in the bowl . Mix all to a thick marinade .
  7. Add 250 grams paneer cubes and marinate for 10 minutes .
  8. Heat butter in a pan for shallow frying . Fry the marinated paneer cubes
  9. until roasted in medium heat . Flip all the sides and fry . Keep the fried paneer aside .
  10. In a 5 litre cooking pot , heat 1 cup oil ,roast 50 grams cashews ,9 cloves, 1 black cardamom,4bay
  11. leaves, 3 staranise, 5 green cardamom , mace 1/4 teaspoon.Add 1 ladleful barista .
  12. Add 1 tablespoon ginger garlic paste . Sauté until raw smell leaves .
  13. Add the remaining green purée. Sauté and cook for a minute.
  14. Add 3 big sized ripe tomatoes finely chopped . Sauté and cook until mushy . Add 2 teaspoons salt .
  15. Add finely chopped 1 big green bell pepper . Sauté until crunchy .
  16. Add 1 tablespoon garam masala powder . Mix and cook until masala combines well in the gravy . Gravy
  17. thickens . Transfer gravy to another bowl . Let’s start layering 70%cooked rice , gravy , barista
  18. as shown .First layer rice , Barista then green gravy . Sprinkle fried paneer cubes on gravy layer.
  19. Add generous baristas on each rice layers . Layer counts is upto you .
  20. Finally , smear 2 tablespoons ghee .
  21. Pour 1 cup saffron infused warm milk on top .
  22. Cover , seal the pot and Dum cook for 15 minutes in low to medium heat .
  23. Once done , fluff the biryani immediately . Start taking the layers from bottom to up.Don’t overdo.
  24. Delicious Green Paneer Biryani is ready . Serve hot with any raitas of your choice .
