Yummy , healthy , tasty and full of flavours one pot meal
Cut mushrooms in halves , slice onions length wise
In a big bowl add yoghurt , turmeric powder 1 tsp , ginger garlic paste 1 tsp , coriander powder 1 tsp , salt , chilli powder 1 tsp , a pinch of kasuri methi
Mix well
Now add paneer pieces and mushrooms
Wash rice , soak in water for 20 mins , drain and keep aside for some time
Heat oil and ghee , add cloves , cardamom and cinnamon
Add rice
Saute for 1 min
Add 300 ml water , (double of rice)
Cook rice 2/3 , do not over cook
Discard extra water
Heat a kadai or nonstick pan , add oil and ghee , once oil is hot add onion slices , bay leaf , onions , green chilli
Also add ginger garlic paste
Add remaining turmeric powder , biryani masala , chilli powder , coriander powder and salt
Add tomato puree
Mix well , saute for 5-6 mins
Add marinated paneer and mushrooms
Mix them and saute for some time
Add blanched green peas
Add mint and coriander leaves
Mix and saute for 3-4 mins
Now we will start layering , first layer is the mushrooms and paneer , second layer is cooked rice
Put again paneer and mushrooms as third layer
Now put rice again as fourth layer
Cover and cook for 5-6 mins in very low heat , sprinkle some garam masala
Healthy and tasty biryani is ready
Pack it for lunch with raita and salad for a wholesome meal
