Akki / Rice flour Uthappams are so easy to make instant saviors during our tiresome days. This instant tiffin recipe comes handy when we run out off our regular idli dosa batter , or when we have sudden guests . A healthy tiffinbox recipe as well . Ingredients Serving: 10

  1. Rice flour 1 cup
  2. Semolina 1/2 cup
  3. Salt 3/4 teaspoon
  4. Eno 1/4 teaspoon
  5. Yogurt 3/4 cup
  6. Water as required
  7. Shredded / grated carrot a fistful
  8. Onion 1 medium finely chopped
  9. Green capsicum finely chopped a fistful
  10. Celery finely chopped 1 tablespoon or as preferred
  11. Any veggies of your choice
  12. Cilantros finely chopped 2 tablespoons
  13. Green chillies ( optional ) finely chopped as preferred .
  14. Sesame oil 6 tablespoons

Instructions

  1. Take 1 cup rice flour in a wide bowl.
  2. Add 1/2 cup semolina .
  3. Add 3/4 teaspoon salt and 1/4 teaspoon eno.
  4. Add 3/4 cup yogurt.
  5. Add fistful grated carrot , 1 medium sized finely chopped onion , fistful chopped capsicum, celery
  6. chopped , cilantros chopped . Use veggies of your choice . Add water and adjust to a thick batter .
  7. Heat a iron tawa . Brush oil throughout . Pour 1 ladle batter on the hot tawa to make Uthappam .
  8. Smear a teaspoon sesame oil . Cook in medium heat .
  9. When the lower side is golden brown , flip to another side . Gently press and cook till the
  10. inner side gives out brown spots . Repeat steps to cook remaining Akki Uthappams.
  11. Akki Uthappams are ready .
  12. Serve hot with any chutney .
