Ingredients Serving: 3

  1. Small brinjal 1/2 kg slightly slit at centre
  2. Oil 1/4 cup
  3. Onions 3 medium thinly sliced
  4. Ginger garlic paste 1 tablespoon
  5. Kashmiri chilli powder 3/4 tablespoon
  6. Coriander powder 1/2 tablespoon
  7. Salt 1.5 teaspoon or as preferred
  8. Dry mango powder 1 tablespoon
  9. Cilantros chopped for garnishing

Instructions

  1. Fry 1/2 kg small brinjals in 1/4 cup oil until brinjal’s skin shrinks .Take the fried ones out.
  2. In the same oil , add 1.5 teaspoon caraway seeds .
  3. Add 3 big thinly sliced onions .Fry until crunchy .
  4. Add 1 tablespoon ginger garlic.
  5. Add 3/4 tablespoon Kashmiri red chilli powder .
  6. Add 1/2 tablespoon coriander powder .
  7. Add 1 tablespoon dry mango powder .
  8. Add salt as preferred . Fry the masala in the oil till it gives a rich colour . Maintain medium
  9. heat .Once the masala gets cooked , oil floats ,add the fried brinjals. Slow cook until gravy
  10. thickens. Garnish with cilantros .Kashmiri Khatte Baingan ready is ready to serve .
  11. Serve hot with your favourite flat breads .
