Ingredients Serving: 4
Curry cut chicken 500 grams
Grated nutmeg 1/8 teaspoon
Chopped coriander leaves 3 tablespoon
Coconut pieces for garnish- optional 1 teaspoon
Turmeric 1/2 teaspoon
Salt to taste
Ghee/oil 1 tablespoon
To Roast and grind
Grated coconut 1/2 cup
Sesame seeds 1/2 teaspoon
Ginger 1/2 inch
Garlic cloves 4-5
Cinnamon 1 inch
Green cardamom 2-3
Black cardamom 1
Peppercorns 1/2 teaspoon
Cloves 5-6
Dry kashmiri chilli 4-5
Fenu greek seeds 1/4 teaspoon
Poppy seeds 1 teaspoon
Coriander seeds 1.5 teaspoon
Onion sliced 1
Oil 2 tablespoon
Saunf 3/4 teaspoon
Jeera 1/2 teaspoon
Small strand mace 1
Instructions
Marinate 500 chicken pieces with salt,
1/2 teaspoon turmeric, set aside for 30 minutes
Heat 1 tablespoon oil, roast all the spices,
1/2 inch ginger piece, 4-5 garlic cloves
Add 1 sliced onion, 1/2 cup grated fresh
Coconut, saute until golden brown
Allow the masala to cool completely
Add to a mixer jar, add a little water, blend
Into a smooth puree
Heat 1 tablespoon oil, add the marinated chicken,
Stir fry for 2-3 minutes
Add the ready masala paste, mix well
Add salt to taste, bring to a boil, cover and
Cook on low heat until done
Add 1/8 teaspoon grated nutmeg, 3 tablespoon chopped
Coriander leaves, take off heat
Serve hot with rice or poa
