Ingredients Serving: 5

  1. For samosa crust 
  2. Organic Whole wheat flour 1 cup
  3. Ghee or butter 1 teaspoon
  4. Oil 1 teaspoon
  5. Salt 1/2 teaspoon
  6. Carom seeds 1/2 teaspoon
  7. Water to form the dough
  8. Filling
  9. Paanch phoron 1 tablespoon
  10. Potatoes 2, diced
  11. Peanuts 2 tablespoon roughly chopped
  12. Green chilies 2-3, chopped 
  13. Ginger 1 inch, grated
  14. Sugar 1/2 teaspoon
  15. Salt per taste
  16. Vegetable oil
  17. Bhaja moshla (roasted and ground spices) 
  18. Cumin seeds 1/2 teaspoon 
  19. Coriander seeds 1 teaspoon
  20. Dried red chilly 1

Instructions

  1. ADD 1 DRY RED CHILLI, 1 TSP CORIANDER SEEDS, 1/2 TSP CUMIN SEEDS TO A TADKA PAN
  2. DRY ROAST ON A LOW HEAT FOR 2 MINS, ALLOW THE SPICES TO COOL A LITTLE
  3. ADD THEM TO A MIXER JAR, GRIND TILL SMOOTH
  4. KEEP THE READY MASALA POWDER ASIDE
  5. HEAT 1 TBSP OIL, ADD 1 TBSP PANCH PHORON
  6. ADD 1 TSP GRATED GINGER, 1 TSP CHOPPED GREEN CHILLIES
  7. ADD 1 CUP DICED POTATOES, 1/2 TSP SALT
  8. ADD 1 TBSP WATER, COOK TILL SOFT
  9. ADD THE READY MASALA POWDER, SAUTE
  10. ADD 2 TBSP ROASTED & CHOPPED PEANUTS, MIX & TAKE OFF HEAT
  11. TAKE 1 CUP WHOLE WHEAT FLOUR, ADD 1 TSP SALT
  12. ADD 1/2 TSP CAROM SEEDS, 1 TSP GHEE
  13. ADD 1 TSP OIL, SUFFICIENT WATER, KNEAD A SMOOTH & FIRM DOUGH
  14. APPLY OIL ON THE SURFACE, KEEP ASIDE FOR 1-2 HOURS
  15. GREASE YOUR PALMS WITH OIL, GREASE A SMALL PORTION OF DOUGH INTO A THIN DISC
  16. ROLL IT OUT BIG, CUT SMALL CIRCLES
  17. MAKE 2 EQUAL HALVES
  18. APPLY WATER ON THE EDGES
  19. BRING THE ENDS TOGETHER, JOIN THEM TO MAKE A CONE LIKE THIS
  20. FILL IT UP WITH 2 TSP READY FILLING
  21. APPLY WATER ON THE EDGES, SEAL THE ENDS
  22. PRESS DOWN WITH A FORK TO MAKE CRIMPS ON THE EDGES
  23. PLACE ON A GREASED BAKING SHEET, BRUSH THE SAMOSA WITH OIL
  24. BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 20 MINS
