ABOUT ILISH KORMA RECIPE

ILISH KORMA is one of the my Mummy special fish recipe . Ilish Korma is a rich preparation of Hilsa fish , where it is cooked in a gravy of onion , garlic and ginger . Ilish has it's own taste and my mom prefer to use moderate spices to keep the original flaver of Ilish intact .

Ingredients Serving: 4

  1. Ilish fish pieces - 300 gm
  2. Onion paste - 3 tablespoons
  3. Green chilli - 2 / 3 no
  4. Ginger garlic paste - 1 tablespoons
  5. Cashewnuts paste - 1 tablespoons
  6. Raisin - 2 tablespoons
  7. Milk - 1/2 cup
  8. Hung curd - 4 tablespoons
  9. For Tempering ......
  10. Whole cinnamon - 1 "
  11. Bay leaf - 1 no
  12. Green cardamom - 3 no
  13. Spices .......
  14. Turmeric powder - 1 teaspoon
  15. Garam Masala powder - 1 teaspoon
  16. Sugar - 1 teaspoon
  17. Salt to taste
  18. Red chilli powder - 1 teaspoon
  19. Ghee - 1 tablespoons
  20. Mustard oil - 3 tablespoons

Instructions

  1. Wash the fish and rub some turmeric powder and salt to the fish pieces and leaves for 5 minutes .
  2. Heat mustard oil in a pan add fish pieces and fry till that fish are golden brown in colors .
  3. Strain from the oil and keep aside .
  4. Temper the oil with whole cinnamon , bay leaf and green cardamom .
  5. Add the onion paste and cook on medium heat till the onion turn brown .
  6. Add ginger garlic paste along with 2 no of slit green chilli and cook till the mixture leaves the edges of the pan .
  7. Add little water in the case found the mixture drying much .
  8. Now add the curd and mix thoroughly and cook in medium flame till the oil separates from the mixture .
  9. Add salt and sugar to the mixture and mix .
  10. Add cashewnuts paste and whole raisins and cook till the nutty aroma goes completely from the gravy .
  11. At this point , add milk along with 1 cup of water and bring it to boil .
  12. Add fried Hilsa and cook for 5 - 7 minutes or till the gravy thickens and oil separates from the gravy .
  13. Add ghee and garam masala powder and mix well .
  14. Serve Ilish Korma with Steamed Rice :relaxed:️:relaxed:️
