Chanar Dalna is an old age Bengali traditional delicacy which is almost on the way to obsolete . It’s is one of the lost recipe that people used to considers as a common vegetarian dish for all time . I got this recipe from my ma of course , the soft balls of cottage cheese prepared with ginger and cumin powder and very light in texture reminds me of my mom

Ingredients Serving: 4

  1. 1. Chana / cottage cheese -100gm
  2. 2. Potato -( 1 boiled )
  3. 3. Potato -1 diced cut
  4. 4. Tomato -1/2 chopped
  5. 5. Ginger paste -1 tbsp
  6. 6. Turmeric -1 teaspoon
  7. 7. Cumin powder -1 tbsp
  8. 8.Cumin seeds -1 tbsp
  9. 9. Kashmiri Chilli powder -1 tbsp
  10. 10. Garam masala -1 tbsp
  11. 11. Bay leaf-1
  12. 12.salt and sugar to taste
  13. 13. Ghee -1 tbsp
  14. 14. Refine oil as required
  15. 15. Maida -2 tbsp
  16. 16.water as required
  17. 17.lemon-1

Instructions

  1. Method for the koftas * You can make chana from 1 ltr of milk
  2. * Boil the milk in a high flame when it is boiling put 2-3 tbsp of lemon juice.
  3. * Stir the milk for sometime , when the chana get separated from the whey off the flame .
  4. * Put the whey in a soft cloth and hung the chana for some time till all the water drained out.
  5. * In a bowl put the chena , boiled potato maida and kneed well. ( maida helps for binding the koftas)
  6. * Add little cumin powder , little chilli powder , salt and sugar and kneed well and gives a shape like a ball . * When all the koftas are really keep it aside .
  7. For the Curry or Dalna * Heat oil in a deep fried pan .
  8. * Put the koftas and fry till golden brown and keep aside .
  9. * In remaining oil put sugar (it helps the curry to give a beautiful color), cumin seeds, bay leaf , garam masala and sauté .
  10. * Put the diced potato and fry till becomes translucent. * Add the chopped tomatoes ,ginger paste and sauté with the potatoes
  11. * In a small bowl put cumin powder , turmeric, chilli powder and water and mixed it .
  12. * Put the mixture into the pan and sauté well. * Add salt and sagar as per taste .
  13. * Put some water and cover the lid to boil the potatoes. * After some time when the potatoes are boiled and the gravy releases the oil put some more water to increase the density of the gravy . Then put the chanar koftas into it and sauté for some time.
  14. * Add ghee and sprinkle some garam masala over it * Off the flame and set it for some time . * Chanar dalna is ready to serve .
