Spicy yam curry, made with curd

Ingredients Serving: 4

  1. Yam 500 gms
  2. Tomato 1 chopped
  3. Garlic pods 2
  4. Ginger paste 1/2 tsp
  5. Onion 1 chopped
  6. Curry powder 1 tsp
  7. Red chilli powder 1 tsp
  8. Turmeric powder 1/3 tsp
  9. Garam masala powder a pinch
  10. Curd 1/2 cup
  11. Asafoetida a pinch
  12. Curry leaves few
  13. Salt for taste
  14. Sugar a pinch optional
  15. Water 1 cup
  16. Ghee 1 tsp

Instructions

  1. Cut yam in cubes
  2. Pressure cook for 1_2 whistles
  3. They should not be very soft
  4. Now heat oil in a kadai
  5. Add curry leaves
  6. Add black mustard seeds and hing
  7. Saute for 1_2 mins
  8. Add chopped onions
  9. Saute until they are translucent
  10. Now add ginger and garlic paste
  11. Add turmeric powder
  12. And chilli powder
  13. And turmeric powder too
  14. Add some water, 1 tsp
  15. Saute until the water dries up
  16. Add chopped tomatoes
  17. Cook until they are soft
  18. Now add curd
  19. Cook for 5_6 mins
  20. Stir for 1_2 mins more
  21. Now add boiled yam pieces
  22. Mix well with the masala
  23. Cover and cook for 5_7 mins
  24. Add water
  25. Cook in medium heat for 5 mins
  26. Add sugar
  27. Add garam masala
  28. Switch off gas
  29. Spread a tsp of ghee
  30. Serve hot with roti or rice
