ABOUT Kothukari biryani( Mutton kheema biryani ) RECIPE

Kothukari means minced meat in Tamil . Tamil Nadu style Kothukari biryani is always spicy and delicious . Known for its taste , fresh handmade masalas . This kothukari biryani with mint leaves enhances the flavour and taste of the actual biryani .

Ingredients Serving: 6

Minced meat / Kothukari 800 grams ( add extra for rich taste )
Basmati rice 4 cups soaked for 20 minutes .
Bay leaves 4
Cloves 8
Star anise 4
Stone flower 2
Mace 2
Cinnamon sticks 2 medium
Cardamom 2
onions 2 big thinly sliced
Tomatoes ripe big 1 chopped finely
For masala :
Mint leaves few 10
Garlic pods 20
Ginger medium sized 2 chopped
Green chillies 3
Dry red chillies 3
Fennel seeds 1 tablespoon
Green cardamom pods 4
Water little for grinding
Other ingredients :
Oil 3 tablespoons
Ghee 4 +2 tablespoons
Turmeric powder 2 teaspoons
Red chilli powder 2 teaspoons
Coriander powder 1 teaspoon
Salt 3 teaspoons
Mint leaves a bunch
Coriander leaves for garnishing
Water for rice 4 cups

Instructions

Blend little mint leaves , 20 garlic pods with
2 medium ginger cut into pieces , 3 green chillies , 3 dry red chillies , fennel seeds , cardamom .
In a wide pot , heat 3 tablespoons oil , 4 tablespoons ghee .
Add all the biryani whole spices .
Add 2 big onions thinly sliced . Sauté till light brown in high heat .
Add 1 big ripe tomato finely chopped .
Add 1/4 of the salt . Sauté till tomatoes turn mushy .
Now add the ground mint paste .
Add 800 grams minced meat . Mix and cook cover for 15 minutes in medium heat .
In between, add 2 teaspoons turmeric powder .
Add 2 teaspoons red chilli powder , 1 teaspoon coriander powder . Mix , cook till meat tenderises.
Cover and cook .
Meat is cooked .
Add a bunch of clean fresh mint leaves . Sauté for a minute in low heat . Add the remaining salt .
Add 4 cups of drained rice . Gently fry the rice in low heat without breaking the grains .
Slow roast for 2 minutes .
Add hot boiling water ( measured ) 1:1 ratio . Smear ghee . Cover . Set to cook for 10 minutes .
Kothukari biryani is ready to serve . Garnish with mint and cilantros .
