ABOUT STRAWBERRY MOUSSE PARFAIT RECIPE

My recipe for strawberry mousse parfait is a keeper and one you’ll want to make again and again! Every bite is packed with so much incredible strawberry flavor and the texture – heavenly! The mousse just melts away in your mouth, leaving you wanting more! And for a fun garnish, I added a chocolate-covered strawberry to each dessert cup for the ultimate fancy garnish!

Ingredients Serving: 6

  1. 8 ounces (225g) cream cheese, softened at room temperature
  2. 2 cups (475ml) whipping cream
  3. 1/3 cup (67g) sugar
  4. 1/2 cup (90g) white chocolate chips, melted
  5. 1/2 cup (90g) sweetened condensed milk
  6. 2 cups (300g) fresh strawberries purée
  7. red food coloring
  8. 1 tablespoon (15g) unflavored gelatine
  9. 2 to 3 tablespoons water
  10. 6-ounce (170g) package strawberry Jello
  11. 1 cup (236ml) boiling water

Instructions

  1. Prepare the whipped cream first. Pour the whipping cream into a mixer bowl and add the 1/3 cup sugar. Whisk on high speed until a fluffy whipped cream forms. Set the whipped cream into the refrigerator until needed.
  2. Prepare the strawberry base. In a large bowl, whisk together the softened cream cheese, melted white chocolate, sweetened condensed milk. Add red food coloring if desired. Whisk in the pureed strawberries; set aside.
  3. In a small bowl, mix together the unflavored gelatine and water. Microwave the mixture for 1 minute, stirring every 10-15 seconds until gelatine is completely dissolved. Pour the gelatine into the strawberry base and whisk until smooth.
  4. Remove the whipped cream from refrigerator. Fold in about 1 cup of whipped cream into the strawberry base. Then begin adding the strawberry base into the whipped cream. Fold the base and cream together very gently, keeping the cream light and fluffy.
  5. Pour the prepared mousse into glass mugs or containers. Fill about three-quarters of each container.
  6. Set the mousse into the refrigerator to set for about 1 to 1 1/2 hours. Make sure the mousse is set before adding Jello!
  7. Prepare the strawberry Jello.
  8. Place the flavored gelatine in a bowl and add 1 cup boiling water; stir until dissolved. Add the 2 cups iced water and stir until mixture is cooled.

  10. Carefully pour the prepared Jello over the set mousse. Fill to the top of each container. Set the dessert back into the refrigerator until completely set, overnight for best results.
