For the bhallas :
Urad Dal - 1 cup
Salt - 1/2 tsp
Cumin seeds - 1/2 tsp
Refined oil
Water
Imli chutney :
Tamarind soaked in water - 1 cup
Roasted Jeera powder - 1 tsp
Sugar (as required)
Salt (as required)
Green chutney :
Coriander leaves - 1cup
Pudina leaves - 1 Cup
Tamarind - 1 tsp
Garlic Clove - 1
Green chillies - 4
Sugar - 1 tbsp
Salt - 1/2 tsp
Curd mixture :
Curd - 1 cup
Sugar - 2 tbsp
Salt - 1/2 tsp
Other Ingredients :
Chaat masala powder
Roasted jeera powder
Red chilly powder
Sev
Chopped coriander leaves
Instructions
For the vadas : Soak the urad dal over night and grind them next day with very little water.
Whisk in the salt and cumin seeds. Heat ample amount of oil, scoop small amounts of batter into it and fry the bhallas.
Mix lukewarm water with little salt, strain the bhallas into it. Dip them for few seconds and drain them. This keeps the bhallas soft.
For the imli chutney : In a pan , heat the tamarind water and the pulp. Add the sugar and little salt. Cook till desired consistency and taste is acquired. Sprinkle roasted jeera powder.
For the green chutney : Grind all the above ingredients in a blender with little water. The proportion is according to personal taste.
For the curd mix : Whisk the curd with sugar, salt and water. I like it a bit sweet, so added more sugar compared to salt.
Assembly :
Pour the curd into a bowl, add the bhallas and Mix, add tamarind chutney, green chutney, sprinkle the powdered masalas and sev, garnish with coriander leaves.
