This pulao is kids ‘ all time favourite . Sweet and tangy combination makes kids ask for more . A very healthy lunch.

Ingredients Serving: 5

  1. Ripe pears big 2
  2. Fresh orange thick juice 1 glass
  3. Basmati rice 4 cups soaked for 15 minutes .
  4. Dry fruits 1.5 cups ( cashews , black raisins , golden raisins , pistachios , almonds )
  5. Ghee 6 - 7 tablespoons
  6. Ginger garlic paste 1/2 teaspoon
  7. Green chillies 2 to 3
  8. water 4 cups
  9. Orange zest 4 tablespoons
  10. Salt to taste
  11. Bay leaves 3
  12. Cloves 6
  13. Stone flower 1 big crushed
  14. Mace 1
  15. Green cardamom 4
  16. Black cardamom 3
  17. Fried onions 1 .5 cups
  18. Garam masala 1/4 teaspoon
  19. Saffron liquid 1/2 cup

Instructions

  1. First in a pan , add orange juice .
  2. Add sliced pears to the juice .
  3. Slow cook in low heat till juice reduces and pears look juiced absorbed, poached .
  4. Remove from heat and keep aside .
  5. In a cooking pot , melt 4 tablespoons ghee .
  6. Add the whole Garam Masala ingredients.
  7. Add green chillies .
  8. Add 1/2 cup dry fruits . Fry for a minute in low heat .
  9. Add 1/2 teaspoon ginger garlic paste. Sauté till raw smell leaves .
  10. Add 1 cup fried onions and reserve the rest for last .
  11. Add the soaked basmati rice .
  12. Fry the rice for a minute till it releases an aroma . Do gently fry the grains without breaking them .
  13. Now add the boiled orange sauce only . Don’t add poached pears .
  14. Mix .
  15. Add salt and spices .
  16. Add the measured water 4 cups . Water ratio differs as per the rice you use .
  17. Allow the water to boil.
  18. Add 1 tablespoon ghee .
  19. Cover the lid and let the rice cook 70 % .
  20. At this stage , place the poached pears , fluff the rice with fork .
  21. Add 1/2 of the orange zests finely grated .
  22. Add saffron water and give a slow Dum cooking .
  23. Meantime , heat ghee in a pan .
  24. Roast the remaining dry fruits . Keep aside .
  25. Finally garnish with fried onions , roasted nuts and grated orange zests
  26. Fluff rice and serve hot with some spicy curries / raitas .
