Ingredients Serving: 5

  1. 1 cup + 2tbsp all purpose flour
  2. 1 tsp baking powder
  3. 1/4 cup +2 tbsp mashed papaya
  4. 1/4 cup +8 tsp papaya diced in small pieces
  5. 1 egg
  6. 3/4 cup + 10 tsp toasted coconut flakes
  7. 1/4 cup thick coconut milk
  8. 1/4 cup canola oil
  9. 1/3 cup brown sugar
  10. For icing
  11. 1/2 cup + 2tbsp icing sugar
  12. 110g creamcheese
  13. 1/2 tsp vanilla extract

Instructions

  1. In a bowl, mix flour, baking powder, sugar, 3/4 cup coconut flakes. Keep it aside
  2. Preheat oven to 180 and line muffin tray
  3. In another bowl, whisk egg, add milk, oil and mashed papaya. Mix everything well. Now add 1/4 cup diced papaya and gently mix
  4. Slowly add dry ingredients and gently fold the batter, this will be thick dense batter. Fill the muffin tray to 2/3 with batter. Bake for 18-25 minutes until top is golden brown
  5. Transfer to a wire rack to cool completely. You can serve as-is or frost muffins and serve. Either way Muffins taste delicious
  6. To make Frosting; in a medium bowl, using an electric mixer, beat cream cheese, icing sugar and vanilla together until creamy. Spread onto cooled muffins. Top with diced papaya and toasted coconut. Serve
