ABOUT Hyderabadi Traditional Mutton Marag RECIPE

Mutton Marag is one of the most traditional dish from Hyderabad. This Marag is actually a soup variety . But totally different from other soups . This Marag is made using tender meat with bones . This is one of the must have dish in Hyderabadi weddings . A spicy , juicy Marag is served with rotis / naan .

Ingredients Serving: 3

  1. Tender mutton with bones 450 grams
  2. Cinnamon sticks medium 2
  3. Cloves 5
  4. Green Cardamom pods 4
  5. Black pepper corns 5
  6. Green chilli paste 1 tablespoon
  7. Ginger garlic paste 1 tablespoon
  8. Crushed garlic 1/2 teaspoon
  9. Onions medium sized finely chopped 2
  10. Freshly Crushed cumin seeds 1 teaspoon
  11. Roasted cashew nuts 5
  12. Pistachios 5
  13. Oil 3 tablespoons
  14. Beaten yoghurt 2 tablespoons
  15. Coconut paste 2 tablespoons
  16. Garam masala powder 1 teaspoon
  17. Freshly roasted - powdered coriander powder 1 teaspoon
  18. Coriander leaves 2 tablespoons
  19. Salt to taste
  20. Black pepper powder 1 tablespoon
  21. Milk 2 tablespoons

Instructions

  1. In a heavy based pot , heat oil .
  2. Add cinnamon sticks , cloves , cardamom pods , black pepper corns .
  3. Fry for few seconds .
  4. Add the chopped onions . Sauté till translucent .
  5. Add mutton . Sauté the mutton pieces in the oil for 3 minutes till the mutton changes colour .
  6. Add ginger garlic paste , green chilli paste . Sauté for a minute .
  7. Now add 1/4 glass water and cover the pot .
  8. Do Dum cooking as shown in the picture .
  9. I placed a wok full of water on top of the mutton pot . In this traditional method , mutton gets evenly cooked tenderly . This method is time consuming compared to pressure cooker method . But anything is okay for achieving the desired taste and texture is my opinion . The juices get released from mutton . Cook mutton under medium flame .
  10. Once the mutton is cooked tenderly , add beaten yogurt . Mix and cook for another 3 minutes .
  11. Add roasted cashew paste .
  12. Add coconut paste .
  13. Mix and cook .
  14. Add Garam Masala .
  15. Add crushed cumin powder .
  16. Add crushed garlic .
  17. Add water to dilute tue mixture to soup consistency .
  18. Add salt .
  19. Add milk .
  20. Add coriander powder .
  21. Add black pepper powder .
  22. Add coriander leaves .
  23. Boil this soup for 5 minutes till the soup bubbles up well .
  24. Adjust salt and pepper .
  25. Hyderabadi Mutton Marag is ready .
  26. Serve hot for breakfast / lunch / dinner with roti / naan .
