For Dum Aloo:
500 gms baby potatoes boiled and peeled
4 freshly grind tomatoes along with 4 green chillies and 1 inch ginger piece
1 tbsp kaju and magaz ka paste
1/2 tsp red chilly powder
1 tsp dhania powder
1 tsp jeera
2 cloves
1 piece cinnamon
1 tbsp oil
Sendha namak as per taste for gravy
1 cup water
For Marination:
2 tbsp hung curd
1 tsp kasoori methi
1 tsp oil
1 tsp red chilly powder
1 tsp dhania powder
1 tsp green chilly ginger paste
Sendha namak as per taste
For Khatta Meetha Kumra :
1 piece whole kachcha kumra
3 green chillies finely chopped
1 tsp oil
1 tsp jeera
2 cloves
1 tbsp red chilly powder
2 tbsp dhania powder
1 tbsp amchur powder
2 tbsp sugar
Sendha namak as per taste
For Rajgir And Kuttu Poori:
1 cup rajgir atta
1/4 cup kuttu atta
1/2 cup boiled and grated potatoes
Salt to taste
Some water
Oil for deep frying
Instructions
For Dum Aloo: Mix all the marination ingredients together nicely and add boiled potatoes . Mix well and keep for 3-4 hours for marination. After 3-4 hours put the marinated potatoes in a micro safe bowl and micro for 5-6 min . Cook until all the moisture evaporates , it may take 7 min also ,depending upon the microwave.
For Gravy: Heat oil in a pan ,add jeera ,cloves and cinnamon , let them splutter , then add red chilly powder and dhania powder ,saute for a while then add grind tomatoes mixture . Cook on low heat till the oil comes out , then add kaju and magaz ka paste , stir well.
Then add salt and ready potatoes , mix well and cook for 5-7 min. Now add water and mix well and cover and cook for 5-7 min more .Here add some chopped coriander. Dum aloo is ready to serve.
For Khatta Meetha Kumra: Cut the kumra in small dices along with the peel. Now heat oil in a pan , put jeera and cloves and then add diced kumra. Add salt and cover and cook on low heat until becomes soft but not mushy.
Then add red chilly powder ,dhania powder and amchur powder ,mix well and let it cook for 5 min.Now add sugar and cook for 5 min further. Kumra is ready to serve.
For Rajgir And Kuttu Poori: Mix all the ingredients except water . Now knead a medium tight dough sprinkling some water . Keep for 10 min for resting and then grease your palm and knead the dough nicely .
Make small balls and roll them . Heat oil on high heat and fry the pooris till brown and crisp. Pooris are ready to serve.
Pooris can be made with kuttu atta ,singhara atta and rajgir atta separately also.

what is kumara? please post a pic of it,is it local veg,or fruit?
