Ingredients Serving: 4

  1. For baati.
  2. 3 cup wheat flour
  3. 1 cup sooji
  4. 3 tbsp ghee
  5. Salt to taste
  6. Ajwain
  7. 1 cup lukewarm water
  8. Daal
  9. 1 cup mixed dal ( mung, urad and chana)
  10. Salt to taste
  11. 1 tsp turmeric powder
  12. 1 tsp red chilli powder
  13. 1 tsp coriander powder
  14. Hing
  15. Ghee
  16. 1 tsp cumin seeds
  17. Mirchi vada
  18. 6 bhavnagri chillies slit
  19. 4 potatoes boiled and mashed
  20. Salt to taste
  21. 1 tsp red chilli powder
  22. 1 tsp amchur
  23. 1 tsp coriander powder
  24. 3 green chillies chopped
  25. 1 tbsp coriander leaves
  26. 1 cup besan
  27. 1 tsp baking powder
  28. Salt to adjust taste
  29. 1/2 tsp red chilli powder

Instructions

  1. For baati Knead a stiff dough adding 3 cup wheat flour and 1 cup sooji. 3 tbsp ghee Salt to taste and ajwain. Keep aside fo 30 min
  2. Make medium sized balls of the dough
  3. Pre heat oven at 200° . Dust the baking plate with flour. Place the dough balls and bake for 40 min. Remove from the oven and dip in ghee
  4. For dal Soak the dals for an hour. Cook the soaked dal in cooker with salt and turmeric. Make a paste of tomato ginger and cumin. And green chillies
  5. In a pan add ghee. Add hing and cumin. Add the tomato paste. Saute well. Add turmeric powder and red chilli and coriander powder. Mix well. Cook till oil separates.
  6. Pour it over the dal. Add little water and cook till desired consistency.
  7. For mirchi vada Make slit in the chillies keep aside. For stuffing In a mixing bowl add all ingredients under filling and mix and well.
  8. Make batter of besan, salt , baking powder red chilli powder and water.
  9. Dip the stuffed chillies into the batter. Heat oil in kadai. On a medium hot oil fry the vadas. Till crisp
  10. Fill the stuffing into the slit chillies.
