ABOUT Awadhi Mutton Biryani RECIPE

Awadhi Mutton Biriyani is a popular dish of Awadhi cuisine.Awadhi cuisine is a cuisine native to the city of Luknow.Awadhi biriyani is made by cooking meat in ghee with aromatic spices until the meat is tender then adding semi boiled rice and cooking in the sealed pot over the low heat till done.

Ingredients Serving: 2

  1. Ingredients for Mutton:
  2. Mutton 1/2 kg
  3. Curd - 1/2 cup
  4. Ginger paste - 1 tbsp
  5. Garlic paste - 2 tbsp
  6. turmeric powder - 1 tsp
  7. coriander powder - 1 tsp
  8. Red chili powder - 2 tsp
  9. Cinnamon stick - 1 inch
  10. Green Cardamom - 3
  11. Cloves - 4
  12. Garam masala powder - 1 tsp
  13. Salt to taste
  14. Oil-1/4cup + 1 tsp for marinating
  15. Ghee - 2 tablespoon
  16. Ingredients for rice:
  17. Basmati rice - 2 cups (soaked for 15 minutes)
  18. Water - 4 cups
  19. Salt to taste
  20. Oil - 1 tbsp
  21. Bay leaf 1
  22. Other ingredients :
  23. Brown onions - 3/4 cup (cut onion into sliced then fry until brown)
  24. Ghee - 1/4 cup
  25. Black cardamom - 2
  26. Star anise - 1
  27. Cinnamon stick - 1 inch
  28. Ingredients for biriyani garam masala:
  29. Cinnamon stick - 2 (1 inch each)
  30. Bayleaf - 2
  31. Cloves - 5
  32. Green cardamom - 5
  33. Mace - 1 teaspoon
  34. Shajeera 1 teaspoon
  35. Coriander seeds - 1 teaspoon
  36. Kebab chini - 1 teaspoon
  37. Star anise - 1

Instructions

  1. Take a pressure cooker and pour all the meat with cinnamon stick, green cardamom and cloves.
  2. Add 1.5 cup water and pressure cook upto 4 to 5 whistles.
  3. Pass the meat through a strainer into a clean saucepan to drain the mutton stock and keep it aside.
  4. Marinate the mutton with ginger garlic paste, spices powder, salt, little bit of oil and keep it refrigerated for 5 hours.
  5. After 5 hours, take out the marinated mutton from fridge.
  6. Heat ghee in a heavy bottomed pan. Pan should be very big so you can cook your biriyani in this vessel later.
  7. Transfer the marinated meat from the bowl to the pan.
  8. Now stir and cook the meat until oil gets separated.
  9. Add mutton stock and salt.
  10. Cover with lid and simmer it for another half an hour. Cook till the mutton is done. The gravy should not be very thick or thin.
  11. To make Biryani rice:
  12. Take a big pan, add 4 cups of water, oil and salt. Bring it to a boil, when the water will start boiling, add rice, cook rice till 3/4 th done.
  13. For the Biryani garam masala:
  14. Roast all spices under Biryani garam masala and grind to make a fine powder.
  15. Final preparations:
  16. Add half a portion of garam masala on the cooked mutton.
  17. Add cooked rice on mutton.
  18. Make a hole between the rice, mutton layer and pour 3/4th saffron induced milk over it.
  19. Spread remaining milk on rice.
  20. Add little salt, remaining garam masala, fried onions, kewra essence and Gulab jal.
  21. Temper with star anise, black cardamom, cloves and cinnamon stick into ghee and pour over the biriyani.
  22. Cover the pan with aluminium foil, then put the lid and weigh it down with something heavy.
  23. Place a thick bottomed tawa on the gas stove, keep Biryani vessel on this tawa.
  24. Cook for 30 minutes on a low flame. Turn off the gas. Awadhi Mutton Biryani is ready to serve.
