Ingredients Serving: 2

  1. For Cheesy Parmesan Chicken
  2. Olive oil 2 tablespoon
  3. Garlic clove 1
  4. Parmesan cheese 1/4 cup
  5. Ground pepper 1/4 teaspoon
  6. Mixed Italian herbs 1 teaspoon
  7. Paprika powder 1 teaspoon
  8. Chicken breast scored 2
  9. Salt to taste
  10. For Vegetable Pulao
  11. Rice 1 cup
  12. Water 2 cups
  13. Oil 1 teaspoon
  14. Ghee 1 teaspoon
  15. Onion 1
  16. Ginger garlic paste 1/2 teaspoon
  17. Mixed vegetables (beans, carrot and peas) 3/4 cup
  18. Clove 2
  19. Cardamom 1
  20. Ghee 1 teaspoon
  21. Mint leaves 2 sprigs
  22. Salt to taste

Instructions

  1. Preheat oven to 180 degree centigrade. Lightly grease a baking tray.
  2. In a bowl, blend olive oil and garlic. In a separate bowl mix Italian herbs, chilli flakes pepper powder, salt and little paprika powder.
  3. Add scored chicken breast into the mixture and rub well. Let it rest for 10 minutes.
  4. Bake 30 minutes in the preheated oven or until the chicken is baked.
  5. Vegetable Pulao
  6. Cut onion and dice vegetables evenly.
  7. In a pressure cooker add oil and ghee and all the whole garam masala. Let it infuse in oil.
  8. Add onion and saute well. To it add ginger garlic paste and saute till raw smell disappear.
  9. Add vegetables and stir fry for a minute.
  10. Add rice, water and salt to taste. Pressure cook for 5 minutes on high and 5 minutes on low flame. It's done.
  11. Assembly
  12. Spread a bed of Indian Vegetable Pulao and place baked chicken with grated Parmesan cheese and marinara sauce. Garnish it with mint leaves.
