Herb roasted chicken with its own jus along with butter tossed vegetables and potato wedges

Ingredients Serving: 2

  1. Chicken breast 2no.
  2. Oil ( olive or any cooking oil) 100ml
  3. Salt 1/2 tablespoon
  4. Pepper 1/2 tablespoon
  5. Mix herbs 1 tablespoon
  6. Lemon 1no.
  7. Stock 50ml
  8. Potatoes 2 no.
  9. Broccoli 2 flowerets
  10. Bell pepper 1/2 no.
  11. Refined flour 1/2 tsp
  12. Butter 100gm
  13. Parsley 2 sprig

Instructions

  1. Marinate chicken breast with oil, lemon, salt, pepper and mixed herbs and allow it to rest for half an hour
  2. Meanwhile blanch broccoli and cut diamonds of bell pepper.
  3. Cut wedges of potatoes and put oil, salt, pepper and herbs over them and apply it properly. Bake potatoes in pre heated oven on 170-180℃ for 12-15 min. .
  4. Now heat the pan and put some butter in it. Roast the chicken till it attains golden brown color on both sides and also cooked properly.
  5. Take out the chicken and in same pan add some more butter and put some herbs, refined flour and stock in it
  6. Cook the sauce and put it in sauce bowl
  7. In another pan, heat some butter and toss vegetables in it.
  8. Now cut the chicken and plate it along with potatoes, vegetables and sauce
