Maa, inji/Mango Ginger is a root vegetable and looks like ginger which is good for pickling.It’s a member of the ginger family that is not as widely known. That hit of raw mango along with the crunch of ginger is a delicious combination, a true marvel of nature. I have always seen my mother and mother in law use this injimanaga for fish curry which taste really delicious, I wanted to try this differently hence thought of making pickle which is very simple and quick.

Grate Mango Ginger and set aside
Heat oil in a kadai, add mustard seeds and allow it to splutter and then add Asafoetida, fry for 1 min
Add grated Ginger Mango and fry for 2 mins, add both red chilly powder and salt fry for another 2mins, add dry mango powder and jaggery, stir well and remove from fire.
Serve with Dal rice or khichadi
