ABOUT Edamame spaghetti with avocado pesto RECIPE

This is a healthy pasta made only with green soya beans . Proteins loaded and full of fibre and lowest carbs this healthy dish is hard to resist

Ingredients Serving: 2

  1. 1 Pack Edamame spaghetti
  2. 1 Avocado
  3. 1 Small bunch small baby spinach
  4. 1/4 Cup Mixed vegetables
  5. 3-4 Nos Cherry tomatoes
  6. 1/4 Bunch Cilantro leaves
  7. 1 Tbsp garlic paste
  8. 1 Tbsp olive oil
  9. 1 Tbsp lime juice
  10. Pinch salt
  11. 1 Tbsp Green Chilli sauce
  12. 1 Tbsp Pine nuts
  13. Few basil leaves

Instructions

  1. Cook the edamame spaghetti in a pot of hot water with a tsp of olive oil , as per instructions on the pack . Pinch of salt maybe added .
  2. Edamame spaghetti usually cooks faster so keep an eye as you don't want them soggy . Drain and keep aside .
  3. To make pesto, add avocado sliced , pine nuts , cilantro leaves , some baby spinach leaves , some basil leaves , garlic and lime juice , blend to paste . Keep aside .
  4. In a pan add olive oil , toss veggies , cherry tomatoes , some chopped spinach leaves , add the cooked edamame spaghetti, add the pesto , mix well . Add green chilli paste . Add salt as required .
  5. You can serve this with some crumbled cheese or toasted tofu . Enjoy !
