A sumptuous dish! Wholesome meal with the goodness of colourful vegetables. Use fresh or left over idlis.
Chop onion, tomato and the vegetables. Cut the Idlis into a desired shape.
Take a skillet add 2 tsp oil.
Now, add mustard seeds,curry leaves. Let them splutter well.
Now add chopped onion, sauté for a minute and add all the chopped vegetables.
Add the salt and other spices as per taste.
Keep it covered for 2-3 minutes.
Now add the Idli pieces and mix well. Cover and cook for 2-3 minutes on low.
Granish with coriander leaves and serve hot.
