ABOUT Malvani chicken curry RECIPE

A famous and flavourful dish from Maharashtra. It needs alot of coconut which is easily available in the Konkan area. A coconut based spicy yet tasty recipe. I have learnt this recipe from my Marathi friend.

Ingredients Serving: 4

  1. For marination:
  2. Chicken - 700 gms
  3. Ginger Paste - 1 tsp
  4. Garlic paste - 2 tsp
  5. Salt - As required
  6. Turmeric powder -1 tsp
  7. Chilli powder -2 tsp
  8. lemon juice - 1 tbsp
  9. Malvani masala -
  10. Cumin seeds - 1 tbsp
  11. Coriander seeds - 1 tbsp
  12. Green cardamom - 3
  13. Black cardamom - 1
  14. Cinnamon - 1 inch stick
  15. Cloves- 4-5
  16. Shahjeera - 1 tsp
  17. Jaifol / nutmeg - 1/2 tsp
  18. Javitri / mace - 1/2 tsp
  19. Black peppercorns - 7-8
  20. Dry Red Chilli - 2
  21. Grated coconut- 4-5 tbsp
  22. Poppy seeds -2 tbsp
  23. For the gravy:
  24. Onion- 2 thinly sliced
  25. Ginger paste -1 tsp
  26. Garlic paste -2 tsp
  27. Kashmiri chilli powder - 1 tbsp
  28. Turmeric powder- 1-2 tsp
  29. Salt - As required
  30. Green chilli -1 finely chopped
  31. Malvani masala- 3-4 tbsp
  32. Garom masala- 2 tsp

Instructions

  1. Marinate the chicken with ginger-garlic paste, turmeric powder, chilli powder, salt and lemon juice for 1 hour.
  2. Heat a pan with 1 tbsp oil, add the cumin seeds, coriander seeds, green cardamom, black cardamom, cinnamon, cloves, shahjeera, black peppercorns, red chillies, jaifol, javitri, grated coconut, poppy seeds.
  3. Stir continuously until it develops a nice aroma and turns into a nice golden colour. Turn off the gas and place it into a grinder. Let it cool, then make fine paste with the help of a little water. The malvani masala is ready, keep it aside.
  4. Heat a kadai with 4-5 tbsp of oil, add the bay leaf. Then add the thinly sliced onion and frying onion till it turns to a nice golden colour, then add the ginger and garlic paste, salt to taste, turmeric powder, kashmiri chili powder, chopped green chilli.
  5. Then add the marinated chicken and mix it well with the onion masala on a medium-high flame for 4-5 mins. Cover the kadai, reduce the flame on fire for 7-8 mins.
  6. After 8 mins, add the malvani masla and mix it well with the chicken. Then add a cup of water, give it a nice stir and keep cooking further for 10 mins on a medium heat.
  7. When the chicken becomes tender, it has a thick gravy and the oil separates from the chicken masala, this means it is ready. Add the garam masala and 1-2 tsp of lemon juice. Give it a nice stir.
  8. Keep the gravy as per your desired consistency and sprinkle some coriander leaves.
  9. Place it on a serving bowl. Serve it with steamed rice, roti, naan, bakhri or whatever you like.
