ABOUT Mangalore Paneer ghee roast RECIPE

Most of us love Paneer . A protein rich food to be included in our diet regularly . This paneer ghee roast is a Mangalorean recipe . Fresh paneer roasted in desi ghee and freshly ground masalas makes this recipe a superhit . Kids love these paneer ghee roast when the spice is reduced to less . This snack is a popular Mangalorean dish .

Ingredients Serving: 2

  1. Fresh paneer cubes 250gms
  2. Kashmiri red chilli 4( adjust according to taste )
  3. Coriander seeds 2 tablespoons
  4. Cumin seeds 1 teaspoon
  5. Fennel seeds 1/2 teaspoon
  6. Garlic pods 4
  7. Ginger a small piece
  8. Hing a pinch
  9. Cinnamon stick 1 inch
  10. Cloves 3
  11. Turmeric powder 1/2 teaspoon
  12. Tamarind paste 1 teaspoon
  13. Ghee 3 tablespoons
  14. Water to grind thick masala ( 90ml )
  15. Salt as taste

Instructions

  1. In a pan , heat a teaspoon of ghee . Roast the dry chillies , coriander seeds , cinnamon , cloves ,cumin seeds , fennel seeds , garlic pods , ginger for 2 minutes till the chillies change colour and gives out aroma . Switch off the flame . Cool this mixture completely .
  2. Transfer the cooled mixture to a mixer grinder and grind this mixture to a smooth thick paste using water .
  3. Now add hing , salt , turmeric powder and tamarind paste to this ground paste . Set aside.
  4. Heat the pan , add 1 tablespoon ghee , gently fry , toss the paneer cubes in the hot ghee under low flame . Keep tossing gently in between till the paneer turns to golden colour . Transfer these roasted paneer cubes to a plate . Fry curry leaves . keep aside .
  5. In the same pan , heat the remaining ghee , pour the ground masala paste , fry the masala in ghee for two minutes under low flame ( prevents burning ) .
  6. The masala firms and changes dark at one point .
  7. Add the roasted paneer cubes to this fried masala and mix both together . See that you don’t break the paneer while mixing . Now let this masala coated paneer get re-roasted for 2 minutes . Finally add the fried curry leaves .
  8. Serve hot .
