Slice the bitter gourd and remove the seeds.
Add salt to the bitter gourd and mix well. Keep aside for 5 minutes. It will leave water. Drain the water.
Add all the remaining ingredients and mix well. Let it marinate for another 10 minutes.
Deep fry on medium heat till golden brown and crisp.
Serve hot as an accompaniment with rice or rotis.

want to know when do you wash the karelas ? Is it before adding the dry ingredients or when the pith and seeds are removed ?
