Ingredients Serving: 3

  1. A medium sized whole papaya .
  2. Sugar 1/2 cup if the fruit is already sweet . if not adjust the sugar as per your taste .
  3. Ghee 1/2 cup / 150 gms
  4. Green cardamom powder 1/2 teaspoon
  5. Cashews and almonds chopped 3 tablespoons

Instructions

  1. Firstly , clean , remove the outer skin of the papaya fruit . Deseed the fruit and take the flesh of the fruit for this recipe . Discard the skin and the seeds .
  2. In a blender , pulse it to a smooth purée without adding a drop of water .
  3. In a wide nonstick / ceramic pan , heat 1 tablespoons ghee . Roast the nuts and keep it aside .
  4. In the same pan , pour the fruit purée and keep stirring continuously . Let it cook for five minutes till the raw smell leaves completely . Now add the sugar . You can replace with palm candies too .
  5. The sugar would start melting and the papaya purée would turn watery . Keep stirring continuously . At one stage , when the papaya purée starts firming , immediately add ghee in regular intervals , while you keep stirring by one hand . Add the cardamom powder and mix .
  6. The halwa mustn’t stick to the sides and must be easy to scoop . Shouldn’t be too rigid and too watery . The halwa should look glossy . The orange glowing coloured halwa is ready . If required add ghee so that the halwa doesn’t look dry .
  7. Garnish with the roasted chopped cashews and almonds .
  8. Serve warm . Enjoy !
