Ingredients Serving: 5

  1. Cauliflower florets 50 g
  2. Chopped carrot 50 g
  3. Green peas 50 g
  4. Chopped French beans 50 g
  5. Chopped Capsicum 1
  6. Cubed cottage cheese 50 g
  7. Cashew nuts 7-8
  8. Tin pineapple pieces 50 g
  9. Green grapes 7-8.
  10. For gravy :
  11. Chopped onion 2
  12. Garlic cloves 5-6
  13. Cashew nuts 8-10
  14. Tomato 2
  15. Bay leaves 2
  16. Big cardamom 1
  17. Small cinnamon pieces 2
  18. Cloves 3
  19. Other ingredients
  20. Ghee 5-6 tablespoon
  21. Cumin seeds 1 teaspoon
  22. Dry red chili 1
  23. Salt to taste
  24. Red chilli powder 1 tablespoon
  25. Kitchen king masala 2 teaspoon
  26. Sugar 1 teaspoon
  27. Milk 1/2 cup
  28. Cream or homemade malai 1/4 cup

Instructions

  1. Boil carrot, cauliflower florets, green peas, French beans and capsicum in enough water and strain it.
  2. Boil chopped onion, garlic cloves and cashew nuts in enough water
  3. Cool down and make paste in mixer grinder
  4. Blanch tomatoes in boiling water and then remove its skin.
  5. Grind in mixer grinder.
  6. In a non-stick pan heat ghee.
  7. Add bay leaves, big cardamom, cinnamon pieces, cloves, dry red chili and cumin seeds.
  8. When cumin seeds splutters add onion cashew nut paste and saute over low flame
  9. Saute till ghee seperates.
  10. Now add blanched tomato gravy and saute it.
  11. Remove all khada masala with spoon.
  12. Add red chili powder, kitchen king masala and sugar.
  13. Add boiled vegetables, cottage cheese, pineapple, grapes and cashew nuts and mix well.
  14. Add salt to taste
  15. Add milk and milk cream
  16. Add little water and cover with lid and simmer for 5-7 minutes. Navratan Korma is ready to serve.
