Ingredients Serving: 4

  1. Okra/ Bhindi- 250 gms, washed, wiped dry
  2. Cheddar Cheese- 125 gms, grated
  3. Cottage Cheese- 150 gms, grated
  4. Cornflour-1 tbsp
  5. Red Chilli Powder- 1 tsp
  6. Amchur Powder- 1 tsp
  7. Roasted Cumin Powder- 1/2 tsp
  8. Pepper Powder- 1/4 tsp
  9. Fresh Coriander- 2 tbsp, finely chopped
  10. Salt- to taste
  11. Oil- 2-3 tbsp

Instructions

  1. MAKE LENGTHWISE SLITS IN 250 GMS WASHED, DRIED OKRA
  2. FOR STUFFING - MIX 125 GMS CHEDDAR CHEESE, 150 GMS COTTAGE CHEESE, 2 TBSP CORNFLOUR, 1 TSP AMCHUR
  3. ADD 1 TSP RED CHILLI POWDER, 1/2 TSP CUMIN POWDER, 1/4 TSP PEPPER POWDER, 2 TBSP FRESH CORIANDER
  4. ADD SALT TO TASTE, MIX WELL
  5. STUFF THIS INTO THE SLIT BHINDIS, PRESS LIGHTLY TO SEAL
  6. HEAT 2-3 TBSP OIL, SHALLOW FRY THE BHINDIS
  7. COVER & COOK ON MEDIUM LOW HEAT
  8. TURN THE BHINDIS GENTLY ONCE IN BETWEEN
  9. TAKE OFF HEAT WHEN DONE
  10. SERVE HOT
