ABOUT Kashmiri stuffed Bhindi RECIPE

The rich and delicious stuffed bhindi can be made easily at home by planning its preparation in advance, prepare and store stuffing masala for bhindi and then using it as and when required

Ingredients Serving: 4

  1. Bhindi 400 gms
  2. Grated paneer 100 gm
  3. Salt 1/4 tsp
  4. Black pepper powder 1/4 tsp
  5. Oil for shallow fry
  6. For gravy
  7. Onion paste of 3
  8. Tomato puree of 3
  9. Ginger garlic paste 1 tsp
  10. Beaten curd 4-5 tbsp
  11. Mustard oil 3 tbsp
  12. Salt to taste
  13. Garam masala 1/2. Tsp
  14. Red chilli powder 1/2 tsp
  15. Ginger powder 1 tsp
  16. Star annise 1
  17. Sugar 2 pinches
  18. Saunf powder 1 tsp

Instructions

  1. Wash the bhindi and dry it thoroughly
  2. Remove caps and slit it. Keep it whole, keep them aside
  3. In a bowl , add paneer and all other ingredients.
  4. Mix it well.
  5. Stuff it as much as you can in the bhindi
  6. In a flat pan add 3-4 tbsp oil and shallow fry the bhindi
  7. Keeping stuffing side on top
  8. For gravy
  9. Add oil in a kadai, slightly fry the star annise and then add onion paste , saute to nice golden color
  10. Add ginger garlic paste, saute for a min
  11. Add 1/2 cup water ,cook it oj high flame till it dries up and oil separates
  12. Now add tomato puree and give it a good boil
  13. Add beaten curd, saunf powder and all other masalas, except salt
  14. Mix it well and arrange bhindi over it
  15. Cover and cook it on slow heat till it done
  16. If it is thick add little water
  17. Lastly add salt, taste and balance
  18. Serve hot with chapati
