Ingredients Serving: 10

  1. For jigarthanda icecream:
  2. Whole cream milk- 1/2litre
  3. Sugar -1 1/2cups + 4 tablespoon
  4. Cornflour- 1 tablespoon
  5. Freshcream- 250 ml
  6. Water- 1/4 cup
  7. Other ingredients:
  8. Badam pisin- 5 gms
  9. Nannari syrup - 4 tablespoon (per servings)
  10. Milk- 1litre
  11. Milkmaid - 4 tablespoon.

Instructions

  1. For icecream Pour milk in a pan and bring it to boil.
  2. Add sugar to this milk and boil this till it reduce to half.
  3. At this stage add cornflour to this and mix well.
  4. In another pan add 4 tablespoon of sugar and caramalize.
  5. Once it caramelize add water to it to make caramelized syrup.
  6. Add this syrup to milk mix well and let it come to room temparature.
  7. Take fresh in a bowl and whisk it nicely with fork till it become semi solid.
  8. Pour this cream in milk and freeze it for 2hours.
  9. Take out from freezer blend it nicely and freeze for 2 hour.
  10. Repeat this process 3 times and finally let it freeze for 8hours.
  11. Soak badam pisin in water for about 5 hours.
  12. Boil 1 litre milk till it reduce to 4 tablespoon of milkmaid and keep it ready.
  13. Take a glass add 4 table spoon of soaked badam pisin.
  14. Add 4 tablespoon of nannari to it.
  15. Add reduced milk to it and mix well.
  16. Finally add generous scoop of ice cream to it and serve chill.
