ABOUT NOLEN GUR GAJAR BEETROOT HALWA RECIPE

Carrot and beetroot are some of my favourite vegetables to make a halwa out of, individually. However, combining the two with Milkmaid and my favourite form of jaggery from Kolkata (Nolen Gur) is a heavenly combination.

Ingredients Serving: 8

  1. 1 kg grated Carrots
  2. 1/2 kg grated Beetroot
  3. 1/2 cup Milk
  4. 1/2 cup Milkmaid
  5. 1/2 cup Nolen Gur
  6. 1/2 cup Olive Oil
  7. 1/4 cup Pistachios
  8. 1/4 cup Almonds
  9. 1 tsp grated Cardamom

Instructions

  1. Heat 1 tbsp of olive oil in a large pan and roast the pistachios and almonds in it for about 2-3 minutes on medium high heat until they start to change colour. Place them aside.
  2. In the same pan, add the rest of olive oil and the grated carrots and beetroot and saute on high heat for about 5 minutes until the vegetables have softened and the water has almost evaporated.
  3. Add milk and cook, stirring constantly for about 2 minutes.
  4. Add nolen gur and Milkmaid and stir through, ensuring all of it has dissolved in the mixture. Add grated cardamom. Stir through.
  5. Turn off the gas and add the roasted nuts. Serve hot or cold, as you desire.
