ABOUT Afgani Masala Baigan RECIPE

Very awesome in curds,coconut,peanuts and seasame this sligthly sweet and sour Baigan is a treat.Kokani style with haldi wali khichadi.This has only little of green chilli as per choice.

Ingredients Serving: 3

  1. 150 grams Green Brinjal
  2. 1/2 cup thin curd
  3. 4-5 pieces of coconut fresh
  4. 2tblspn of oil
  5. 1tspn sesame
  6. 1tspn peanuts
  7. Green chillies as suitable
  8. Salt to taste
  9. 1tspn cummin corriander
  10. 1/2 tspn white pepper powder

Instructions

  1. Cut brinjal into oblong pieces
  2. Now take some oil in fry pan stir fry these and remove
  3. Now take coconut pieces sesame,green chilli,peanuts and stir fry these
  4. Add Little corriander too and grind the roasted mix coarse
  5. Arrange all ingredients
  6. Make baghar now of mustard seeds curry leaves
  7. Add the ground mix and roast 2 minutes ,add all spices and salt here
  8. Add beaten curd thinning it with milk not water
  9. Mix Gravy well add the brinjal stir fried
  10. Cover cook 5Minutes
  11. Remove the brinjal in a deep plate add the gravy on top of brinjals now
  12. Serve with rice or haldi ki khichadi
