The best and rich creamy and sweet honey flavoured spicy vegetarian curry recipe with fresh cauliflower, carrot, potatoes and french beans. So packed full of flavor and simple to make. You don’t have to be a vegetarian to enjoy this recipe!

Ingredients Serving: 4

  1. Assorted vegetables, cut into small ( carrot. French beans , potato and cauliflower) 2 cups
  2. butter 2 tablespoon
  3. Chilli powder 1 teaspoon
  4. Cumin powder 1/2 teaspoon
  5. Garam Masala Powder 1/2 teaspoon
  6. Kasuri methi 1 teaspoon
  7. Fresh tomato puree 2 cups
  8. Roughly chopped onions 1 cup
  9. Broken cashewnuts 1 tablespoon
  10. Garlic 5 cloves
  11. Roughly chopped ginger 2 teaspoon
  12. Honey 1 1/2 tablespoon
  13. Milk 1/4 cup
  14. Fresh cream 1/4 cup
  15. Cornflour 1 teaspoon dissolved with 1/4 cup of water
  16. Salt to taste
  17. Oil 2 tablespoon
  18. Water 1 cup
  19. Coriander leaves for garnishing

Instructions

  1. First heat 2 tbsp of oil in a pan and shallow fry all the vegetables on medium flame, for 8 minutes. Keep aside. 
  2. Ground onion, garlic, cashews and ginger to a smooth paste
  3. Then heat the butter in the same pan, add the prepared paste and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Add the chilli powder, cumin seeds powder, garam masala, kasuri methi and 1 cup of water, mix well and cook on a medium flame for 1 minute.
  5. Add the tomato puree and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Add the honey, milk and fresh cream, mix well and cook on a medium flame for 2 minutes, while stirring occasionally
  7. Add the cornflour-water, mix gently
  8. Add cooked vegitables and cook for 2 minutes
  9. Garnish it with coriander leaves
  10. Serve hot with phulkas, chapathi naan or parathas
