Wash the brinjals and slit till the tip of it
In a grinder add red chilli powder turmeric, ginger, garlic , green chillies, coriander powder, coriander leaves, garam masala, salt into a paste adding little water
Apply this paste as stuffing to brinjals
Heat oil in pan. Add hing, dried red chilli, and curry leaves. Onve they splutter add the stuffed brinjals. On a low flame let it fry.
In meanwhile add peanuts and sesame in grinder. Powder it.
Once the brinjals are cooked add peanut and sesame powder. Mix well. Add the remaining stuffing masala. Mix
Cook for 5 to 6 min
Add coriander leaves and serve hot
