Ingredients Serving: 4

  1. Small brinjals 250 gm slit
  2. 1.5 onion chopped finely
  3. 3 to 4 green chillies chopped
  4. 4 to 5 clove garlic finely chopped
  5. 1 inch ginger
  6. 1 tbsp coriander leaves
  7. 2 tbsp grounut
  8. 1 tbsp sesame seeds
  9. 1 tbsp coconut desiccated
  10. 1 tsp turmeric powder
  11. 1 tsp red chilli powder
  12. 1 tsp garam masala
  13. Salt to taste
  14. 1 tomato chopped.

Instructions

  1. Slit the brinjals and keep them soak in salt water
  2. Dry roast the groundnut. Once they change colour add sesame seeds and coconut. Dry roast till brown. Switch off the flame. And let it cool.
  3. Once cooled. Put it in the grinder, add half of the chopped onion, garlic, green chilies and coriander. Make a fine paste of it.
  4. Mix in turmeric powder and red chilli powder garam masala and salt into the paste. Mix well
  5. Stuff this mix into the brinjals and keep aside.
  6. Heat oil in pan. Add in the onion. Fry well. Add the stuffed brinjals fry for 3 to 4 min.
  7. Add tomato and some turmeric powder and red chilli powder. Keep stirring
  8. Now add 1 cup water and salt. Mix well
  9. Cover and cook for 35 min.
  10. Garnish with chopped coriander. Serve hot
