ABOUT Banana walnut streusel coffee cake RECIPE

One of the most homely wholesome cakes I have baked till date, a huge success as the warm toastiness of the moist sweet bananas with hints of cinnamon and the toasty crunchy walnuts altogether gave some terrific satisfaction.The best part of baking this fruity cake was it bakes up in a delightfully dense manner , yet ever so moist and fluffy.

Ingredients Serving: 7

  1. FOR THE STREUSEL TOPPING 1/3 cup flour
  2. 1/3 cup firmly packed brown sugar
  3. 1 teaspoon ground cinnamon
  4. 1/3 cup chopped walnuts
  5. 1/4 cup butter, softened
  6. 2 tsp cocoa powder ( optional )
  7. 1 1/2 cups all purpose flour ( combination of wholewheat flour and all purpose may also be tried.)
  8. 3/4 teaspoon baking soda
  9. 3/4 teaspoon baking powder
  10. 1/4 teaspoon salt
  11. 3/4 cup sugar or reduce if you wish to make a slightly less sweet cake.
  12. 1/4 cup oil
  13. 1/2 cup yogurt
  14. 1 1/3 cups mashed very ripe bananas
  15. 3 tablespoons buttermilk

Instructions

  1. Preheat oven to 350°F./180 degrees C
  2. Grease your baking pan a, 8 inch pan preferably.
  3. First, make the streusel topping.
  4. In a small bowl, combine the streusel ingredients , the flour, sugar, very small pinch of salt, nuts and cinnamon
  5. Use your fingers to combine the dry ingredients, making sure to break up any brown sugar clumps
  6. Add the butter and work it into the flour mixture until it resembles coarse meal. Set aside.
  7. In a medium size bowl, mix the all flour, baking soda, baking powder, and salt .Next beat the sugar, , and yogurt . Add mashed bananas and buttermilk.
  8. Add wet to the dry slowly till just combined. Do not over mix the batter.
  9. Slowly spread half of batter in the greased pan. Sprinkle half of streusel.
  10. Again top with remaining batter and finish with remaining streusel mix generously.
  11. Bake till a skewer comes clean or till done golden .Approximate time will be around 45 minutes depending on oven types..
  12. When kept on a rack, keep the cake till completely cooled for better slicing.
