ABOUT Saag paneer RECIPE

It is a traditional receipe of Panjab. But here i make a twist in this. Which is a new Avatar of saag.

Ingredients Serving: 5

  1. Mustard leaves 500gm washed
  2. Spinach leaves 300 gm washed
  3. Fenugreek leaves 200 gm washed
  4. Green chillies 4 chopped
  5. Ginger 3 Inch long piece chopped
  6. Garlic 8 pods chopped
  7. Salt to taste
  8. Water 6 cups
  9. For tempering:
  10. Ghee 5 tablespoon
  11. Garlic 5 pods chopped
  12. Ginger 2 tablespoon chopped
  13. Onion 1 large chopped
  14. Maize flour 1/2 cup
  15. Butter 5 tablespoon
  16. Paneer 250 gm
  17. Red chilli powder 1 teaspoon
  18. Rock salt 1 teaspoon

Instructions

  1. Chop finely all leaves.
  2. Add water to a pressure cooker and let it boil. Add chopped leaves to it.
  3. Chop green chillies, ginger, garlic .add to boiled saag and add salt. Close the lid of pressure cooker.
  4. Cook on low flame for 1 hour or 10 whistles. When it is cool open the lid of cooker.
  5. Blend it with the help of blender and add maize flour slowly. Blend till it is fine puree.
  6. Now heat a pan add butter. Take paneer and cut into cubes and fry lightly from both sides. Remove it on kitchen towel. And sprinkle red chili powder and rock salt.
  7. Now in this pan add ghee and add chopped garlic, saute it.
  8. Add onion and ginger saute it till it becomes golden brown. Add this tempering to saag and mix well.
  9. Now cook the saag for 10 mintues and stir constantly. Add fried paneer.
  10. Your saag paneer is ready to serve. Serve it with maize flour rotis.

I dont like ghee so can I use butter in the place of ghee?
