The classic Scottish scones have undergone a lot of variations. We bake it with the ingredients we want to. Here’s a healthy touch to the otherwise basic fruit scone, by adding sweet potato

Ingredients Serving: 6

  1. 1 cup Self-Rising Flour
  2. 1/2 of a large /1 medium sized sweet potato
  3. 1 tsp Baking powder
  4. 1/4 Cup (1/2 Stick) salted Margarine
  5. 2 rounded tbsp castor Sugar
  6. 2/3 cup milk
  7. 1/4 cup raisins or Sultanas

Instructions

  1. Boil the sweet potato. deskin, mash and let cool a bit in a bowl
  2. Set oven to 220C
  3. Mix the flour and baking powder in a bowl, rub in margarine using your fingers - or cut it into the dry ingredients using a pastry blender.
  4. Stir in the sugar and sultanas.then add milk a little at a time while mixing to a stiff dough with a fork. Be careful not to overmix as that can make the scones 'tough' (not soft and crumbly as they should be).
  5. Add the mashed sweet potato and mix in well till no lumps are felt
  6. Turn dough onto a floured surface and roll out to about 1/2 inch thick. Cut into heart shape or rounds (as the traditional Scottish scone) using a cookie cutter
  7. Place on baking tray and bake for about 10 minutes, or until scones are risen and golden
  8. serve warm with tea/coffee or as a snack anytime
  9. store the leftovers airtight
