Cheese Sweet Potato Cheesecake is a wonderful with a light sweet potato taste. Sweet potatoes give the cheesecake a rich buttery and light sweet potato flavor.

Ingredients Serving: 5

  1. Sweet potato 220g
  2. Butter 50g
  3. Shredded cheese 70g
  4. Cream 150g
  5. Egg 2
  6. Almond powder 25g
  7. Almond slice one Time
  8. decoration
  9. Cream 50
  10. Sugar 10 - 20g ( if sugar is to be sweet )
  11. Fruit (blackberry, raspberry, blueberry) each appropriate amount
  12. Mint leaves appropriate amount
  13. Cinnamon powder proper amount

Instructions

  1. I have actually roasted the sweet potatoes. (You can use steamed sweet potatoes or boiled). Wash the sweet potatoes, wrap them one by one in aluminum foil, and bake them in a preheated oven at 250 degrees for 50 minutes.
  2. Rest them for 30 minutes , so that the steam settles down and is cold enough to handle them.
  3. Peel the skin and put it in the bowl and mash.
  4. When the sweet potatoes cool down, add butter and mix. When the butter mixes nicely, add the eggs one by one.
  5. Add cream and mix everything properly. Add some grated cheese as well.
  6. Now sieve the almonds powder into the batter, fold it in nicely so that the batter is well mixed, and then pour it into a greased round mould [15 cm in diameter] , lined with a grease proof paper.
  7. Heat the oven to 180 degree celsius, put the filled mould in a water bath containing hot water, this is called a 'bain marie', bake this for 10 minutes at 180 degree celsius and then reduce the temperature to 165 degrees , and bake further for 45 to 50 minutes.
  8. Check the bamboo skewer and take it out of the oven. (Cover with a bowl etc. on top and let it cool to prevent it from drying out After completely cooling down, chill it overnight.
  9. Put some whipped cream if you like, on the top, cut and serve. You can further garnish with berries, mint leaves and sprinkle some cinnamon powder as well for extra zing.
