Homemade white fluffy and soft butter made from yoghurt is really an amazing one. It does have a little tanginess in it but it is quite negligible. And it is worth the efforts. The best part is that it is made in a blender that acts as a churner that is used traditionally for this. The time also is halved in this quicker version but the only thing is that the blender should be a good one. Try this simple way for a soft, shiny and fluffy white butter that can be used for breakfast or any time you wish to with your favourite meals.

Ingredients Serving: 6

  1. Yoghurt 1/2 a kg
  2. Water 1/4th cup

Instructions

  1. Add yoghurt and water to a blender.
  2. Yoghurt should be of full fat thick one and homemade preferably.
  3. Blend on high for 30 to 40 minutes.
  4. This churning in a blender might differ depending upon the blender you have.
  5. A good quality high power watt blender is needed for this.
  6. If it gets heated up, stop for a while and then continue blending until blobs of butter are seen separated on the top.
  7. The whey that remains can be used in curries or for salted buttermilk or chaas.
  8. Store it in airtight container in the refrigerator and 1/2 kg of yoghurt yields about 1 cup of fresh white butter.
  9. Homemade butter from yoghurt is all ready.
  10. Serve it with bread for breakfast.
