ABOUT Egg Bhurji Grilled Sandwich RECIPE

Bhurji or Egg Bhurji is famous food in Mumbai Maharashtra region, goes well with breads, Pav or chapati. Sandwich is prepared in various ways using variety of stuffing’s and condiments. In this recipe I have used spicy Egg Bhurji. It tastes amazing when grilled.

Ingredients Serving: 4

Egg Bhurji - Eggs - 2
Onion large– 1 finely chopped
Tomato – 4 medium Finely chopped
Finely chopped Coriander leaves – 3 tbsp.
Finely chopped chillies – 2-3 Medium Hot
Grated Ginger – 1/2 tbsp or fresh ginger paste – 1/2 tbsp.
Turmeric powder - 1 tsp
Garam masala (Chicken) –1 tsp
Red chilli powder – 1 ½ tsp
Salt to taste
Oil – ½ tbsp.
For Sandwich – Brown Bread – 8 slices
Butter – 1-2 tbsp

Instructions

Egg Bhurji - In a wok or nonstick pan heat oil. Add finely chopped onion. Cook till translucent.
Add Grated ginger and green chillies. Cook till raw aroma goes away.
Add red chilli powder, turmeric, garam masala and salt. Stir for few seconds.
Add finely chopped tomatoes. Cook them on low flame till tomato softens and become mushy.
Use masher and mash, it for few seconds.
Add finely chopped coriander leaves. Mix well.
Add slightly beaten eggs and keep stirring the mixture until small soft crumbs are formed. This will take 4-5 minutes.
Check the texture of crumbs, if you want your egg to cook more, cook it for more 2-3 minutes. I had kept it soft and little creamy.
Switch off the flame. Garnish it with finely chopped coriander leaves.
Spread some butter on brown bread slice evenly.
Spread 2 tbsp. egg bhurji mixture on bread.
Cover it with another buttered bread slice.
Grill them in Electric or any handheld sandwich maker.
Cut and serve hot.
