Ingredients Serving: 10
For the cupcakes :
1.5 cups All Purpose Flour
1 cup caster sugar
1 tsp baking soda
5 tbsp cocoa powder
1/2 tsp Salt
1 tsp coffee granules
2 tsp vanilla
1/2 cup oil
1 cup hot water
2 tbsp Vinegar
For the buttercream :
1 cup Butter
3 cups icing sugar
1.5 tsp coffee dissolved in 1 tbsp warm water or milk
1 tsp vanilla
Instructions
For the cupcakes :
Preheat oven to 160°C.
Combine all dry ingredients.
Combine all wet ingredients.
Mix the wet and dry ingredients with a spatula until combined, do not overmix.
Line a muffin tray with paper liners or use direct baking cups and fill them wit the batter 2/3 full.
Bake for 18-20 minutes until toothpick comes out clean.
Cool completely before frosting. Will make 12 cupcakes.
For the buttercream :
Combine warm water, coffee and vanilla until coffee is dissolved.
In a bowl beat the butter using hand mixer until light and fluffly for 5-6 minutes.
Add the sugar one cup at a time and beat for 7-8 minutes until all is mixed and frosting is fluffy.
Add the cooled coffee water mixture to this and beat for another 2 minutes.. this can frost upto 12 cupcakes .
Use your favourite nozzle and a piping bag to frost cupcakes or just spoon them on top ! Decorate with heart sprinkles to make them colorful and apt for Valentine's day !
