ABOUT Sugar coated Croissants .. RECIPE

Croissants are probably not something you would make regularly at home. But once in a while it's a fantastic experience.

Ingredients Serving: 8

  1. 250gm - Maida plus extra for dusting
  2. 15 gm - Caster sugar
  3. 1nos - egg
  4. 125 gm - unsalted butter
  5. A pinch of salt
  6. For the starter
  7. 125ml - Milk
  8. 8gm - yeast
  9. 25 gm - maida

Instructions

  1. Heat the milk until lukewarm. Pour into yeast over it and mix well. Sprinkle in the flour and stir to combine well.
  2. Cover with cling film and set aside for 30 minutes. It should develop lots of little bubbles on top.
  3. Today's make the dough, put flour into a large bowl, make a well in the middle and add sugar, egg, 35 gm butter and the starter.
  4. Mix well then turn to a lightly floured work surface . Tear ,roll and turn the dough until smooth.
  5. Put into floured bowl, cover with cling film and leave to rise for about 1 1/2 hours, until double in size.
  6. Knock back gently then roll out the dough into a large rectangular strip about 3-4 mms thick
  7. Dot 90 gm of remaining butter over the two third of the dough. Leaving a 2cm border on either side.
  8. Fold the unbuttoned third of the dough over half the buttered dough, then fold remaining buttered dough on top form a parcel.
  9. Warp the dough in cling film and chill for 20 minutes. Then Remove from the fridge, unwrap the dough and place it on a lightly floured surface.
  10. With one of the open edges of the dough towards you, roll out the dough into a large rectangular strip about 4-5 mms thick.
  11. Repeat this. steps twice more, roll the dough into a strip and fold once.more.
  12. Roll the parcel gently to seal . Cover and chill for at least 2.hours.
  13. Roll out the dough to a rectangular about 3mm thick. Cut the triangles.
  14. Each triangle stretch a bit , then roll up so that the point is outside.
  15. Place on a buttered baking tray.. Curve the ends together to make crescent shpe.. Leave to a warm place to rise for another.30 - 40 minutes.
  16. Preheat the oven 230degrees. Place the croissants in the.oven and immediately lower the heat to 200 degree. Bake for 12 - 15 minutes.
  17. Cool on a wire rack. Coating with sugar dust and serve.
