Sugar nokkal is nothing but sugar coated sev.usually its stuffed in "paruppu thengai" which is must in south indian weddings

Ingredients Serving: 5

  1. Besan-1 cup
  2. Rice flour-1/8 cup
  3. Salt-a pinch
  4. Baking soda-a pinch
  5. Butter-2 teaspoon (softened)
  6. Oil for fry
  7. Sugar - 1 1/2 cups
  8. Water- 1/4 cup
  9. Milk-1/8 cup

Instructions

  1. In a bowl mix besan, rice flour,salt,butter and baking soda.
  2. Add required water to make a soft and pliable dough
  3. Heat oil in a kadai,take a sev press or murukku press with thenkuzhal achu,fill the dough.
  4. Press in hot oil in large circles.don't make it over crowd
  5. Fry in medium flame,cook until it turns golden brown.
  6. In a broad vessel add sugar and water.once it starts to boil add milk.Boil it for a minute
  7. Strained it to remove the impurities.Then again boil the syrup if you swipe the syrup check between your thumb and forefinger there will be 2 string will be formed.
  8. To find the consistency ,in a small bowl of water pour the syrup,it will not dissolve and you can move and gather it.
  9. Switch off the flame
  10. Add the sev and mix well until the syrup coated well in sev
  11. Cool down completely before you stored in airtight container.
