ABOUT Spongy Idlis.. RECIPE

Fluffy and super spongy Idlis are loved by all. Who can forget them for a breakfast ? This South Indian breakfast idea is a yummy one along with being healthy too. Poha or flattened rice is used for fluffy Idlis by many but i stick to my mom's method of doing it with cooked rice. Happy Breakfast Time !!!!!!!!!!

Ingredients Serving: 6

  1. Raw rice 2 cups
  2. Urad dal or black gram 3/4th cup
  3. Cooked rice 1 cup
  4. Salt 1 tsp

Instructions

  1. Soak rice and dal separately for 6 hours or more.
  2. Grind them separately.
  3. Add cooked rice to the raw rice while grinding.
  4. Grind to a smooth and a thick batter.
  5. Add salt and leave it to ferment for over 8 hours.
  6. Put water to boil in a vessel or an idli cooker.
  7. Grease the idli plates.
  8. Add a spoonful of the batter into each depression of the idli plates.
  9. Steam these for a good 15 minutes or a little more covered with a lid.
  10. Do not open the lid to check in between.
  11. The steam should not be allowed to escape in the midst of steaming.
  12. After switching off the flame, wait for about 5 minutes more before you open the lid.
  13. Serve these fluffy idlis with sambar and coconut chutney.
