ABOUT Chicken 65 Dry.... RECIPE

This is one of the most popular starters from South India in which the chicken pieces are first fried and then sesaoned. This recipe does not require any sauce or ajinomoto and rather made with simple ingredients available in every pantry. Egg is optional here and curd can be used in place of it. However egg keeps the chicken juicy and tender. Yummy starter that can be a show stealer at any party.

Ingredients Serving: 5

  1. Chicken boneless big chunks 500 gm
  2. Ginger garlic paste 1 tbsp
  3. Salt 1 tsp
  4. Kashmiri Red Chilli powder 1 tbsp
  5. Blackpepper powder 1 tsp
  6. Vinegar 1 tbsp
  7. Curry leaves chopped 6
  8. Garam masala powder 1 tsp
  9. Cornflour 2 tbsp
  10. Red food colour 1/8th tsp
  11. Egg beaten 1
  12. OR
  13. Thick curd 3 tbsp
  14. Oil for deep frying 2 cups
  15. FOR SEASONING ;
  16. Green chillies slit 3-4
  17. Oil 1 tsp
  18. Curry leaves 5-6

Instructions

  1. Marinate the chicken pieces with all the spices and a beaten egg.
  2. Add cornflour and the curd too.
  3. Refrigerate it for 1 or 2 hours.
  4. Remove it prior to 30 minutes for frying.
  5. Heat oil and deep fry them just until tender.
  6. Take care not to over cook them.
  7. Remove them on an absorbent paper.
  8. Heat a teaspoon of oil.
  9. Add slit green chillies and curry leaves.
  10. Fry for a minute.
  11. Add this seasoning to the fried chicken pieces and toss.
  12. Serve it hot with naans or fried rice.
  13. Garnish with raw sliced onions and lemon wedges.
