Ingredients Serving: 2

  1. 1/4 raw papaya
  2. 1 Medium Carrot
  3. 3-4 cherry tomatoes
  4. 1 medium size green pepper
  5. 2 cloves of garlic
  6. 1/2 tbsp chilli flakes
  7. 1 medium size lemon
  8. 1 tsp soya sauce
  9. Pinch of sugar
  10. Peanuts

Instructions

  1. Grate the raw papaya and carrot. Set aside in a bowl.
  2. Using a mortar and pestle coarsely grind the garlic, chilli flakes, soya sauce, lime juice and sugar.
  3. Mix the grated veggies along with the coarsely ground dressing.
  4. Finely chop the green pepper and add them to the bowl.
  5. If not serving immediately keep in the refrigerator. Let the flavours mix well.
  6. Just before serving add the chopped cherry tomatoes and peanuts.
